Lay each orange on a flat side and slice along the curve of the orange to remove all of the peel and white pith.  Lay the orange on its side, and cut across to create slices.  (You can search “how to peel and slice oranges” for video instructions). Toast the almond slivers in a dry skillet until fragrant and light golden brown. To make the salad dressing, whisk together the olive oil, vinegar, honey, ginger, zest, salt and pepper. When ready to serve, toss the greens with the dressing.  Arrange orange slices around the edge of a serving plate.  Place the salad greens in the center of the plate, then scatter the toasted nuts on top.</image:caption>

      <image:caption>Preheat the oven to 450 degrees. Zest the lemon, chop the parsley and mince the garlic. Toast the pistachios in a dry skillet until fragrant and then chop. Combine these ingredients in a small bowl to make the pistachio topping, and set aside. Snap off the tough ends of asparagus spears, and place on a baking sheet.  Drizzle with 1 tablespoon of olive oil, toss to coat, then sprinkle with a pinch of salt.  Pat the salmon dry with paper towels, and place it skin-side down on a baking sheet. Rub with 2 teaspoons of olive oil, and sprinkle with a pinch of salt and pepper.  Place the baking sheets in the oven.  Roast the asparagus for about 12 minutes, until tender and lightly browned, shaking them midway.   Roast the salmon for about 8 to 12 minutes, until the flesh flakes when pressed gently with a fork and reaches 135 degrees.  The fish will continue to cook a bit after removing from the heat, so start checking after 8 minutes to be sure you don’t overcook them (wild salmon will take even less time than farmed, so start to check them after 5 minutes). Arrange the asparagus on a serving plate, top with a salmon fillet, then scatter the pistachio mix on top, and serve.</image:caption>

Add the onion, garlic, rosemary, and a pinch of salt, and cook, stirring occasionally, for 5-8 minutes until onion is soft and lightly golden.  Add the wine and bring it to a simmer until the liquid is reduced by half. Add the chickpeas and the tomatoes with their juice, bring to a simmer, then cover and cook for 10 minutes, stirring occasionally. Add the spinach a few handfuls at a time, and stir until each addition is wilted.  Season with pepper.  Transfer to serving bowls, drizzle with olive oil, crumble feta cheese on top, and serve warm.</image:caption>

Cut off both ends of the orange to create a flat surface - be sure to cut enough so that you can see the inside of the orange.  Lay the orange on a flat side and slice along the curve of the orange to remove all of the peel and white pith.  Cut the orange into segments.  (You can search for How to peel and slice oranges for video instructions).  Peel and halve the banana.  Cut almonds in half if using whole almonds.  Cut avocado in half, and scoop out the flesh from one-quarter.  Place the ingredients into a blender, along with the almond milk and honey. Process until smooth.   Pour into serving glasses, and squeeze the juice from the orange ends into the glasses for an extra pop of orange flavor.</image:caption>
